I hate to cook but need to start making dinner for myself. What are some easy recipes?

I would like some recipes that are somewhat healthy and don’t use a lot of ingredients. I’m not a good cook so emphasize the "easy". I greatly appreciate your responses!

Get a russet potato- a big one, , or two smaller ones, maybe the same size as a shoe ( for the big one).

Heat the oven, to 350.

Place the potatoe/s in the oven and they will bake for 50 mins.
( You can use sweet potatoes, too and they are SO good!!)

After about 45 minutes, open the oven and , with some oven gloves on , or using a tea towel, slide the potato out, and slit open the skin on top, and open it up like a purse . With a fork, mash up the flesh inside a little bit, and crate a small hole.
Drop in a raw egg into the hole. And then add some grated cheese on top of the egg.

Slide the potato back in the oven and cook another five minutes, or until the egg is soft in the yellow bit and firm on the white bit= put the potato on a baking tray at the beginning of the cooking, so if you spill anything, it’s be OK.

Take the potato out after that last 5 minutes.

Season the melted cheese with salt and pepper.

Add a splash of soysauce- this is the best part!
Soft eggyolk with soysauce is so good!

BROWN RICE and tuna warm salad- this is the best salad.

Get a pot and fill with 4 cups of water.
add a pinch of salt.

Turn on the heat, and get the water boiling- it will be bubbling after 5 minutes.
Add 2 cups of brown rice, stir, and cover the pot with a lid, or some kind of cover.
Bring the heat dow to a simmer- this means the heat is as low as can be without the flame actually going out!
If you see the water bubbling very very slightly, that is a "simmer",
So, cover the rice, and come back in 20 minutes.

Meanwhile- open and drain a can of tuna, a can of chicpeas or kidney beans ( hell, I use both, they are CHEAP and totally 100% healthy.
Drain them and rinse with water- if you haven’t got a colander, just rinse them through still in the can- the gloop they come in is normal, it’s just murky water.
Also get some canned, or frozen corn. and frozen green peas.
DO NOT USE CANNED PEAS!

Why?

They are totally gross- brown, mushy and horrible.
Freshly frozen green peas are sweet and lovely!
Also chop very finely, about five green onions, or a very small normal onion.

After twenty minutes, take the lid off the pot with the rice- the liquid should all have been absorbed and your rice shoul dbe cooked and fluffy.
Stir it with a fork and taste it.If there is still a bit of liquid left, cover and continue simmer for five minutes.

When rice is done, transfer it to a bowl.
Add the veg and tuna ingredients, and stir in lightly, so the tuna is still flakey.
Add salt and pepper to season. And a drizzle of vinaegrette- don’t put mayo on this salad it’ll turn the rice gooey.
This vinaegrette ( salad dressing) is the best for this lovely healthy salad.And it lasts a few days and tastes better the next day even.
But eat it warm, it is SO good, and so cheap.

Lastly-get some lentils- these are one of the "superfoods" have more health benefits that most other foods.

Make wholewheat noodles with shrimp and bean sprouts-
buy some wholewheat- can’t stress that enough, The white noodles are glue in your blood stream, and will turn to sugar, so buy wholewheat pasta noodles- they are the same price.
Boil some water, then add the noodles, and cook for about 8 minutes.
They are done when you take one strand from the water, and throw it on the wall and it sticks! Before that it won’t stick.

Drain the noodles from the water. and add a little bit of oil, to lubircate them, shake them around so they don’t clump together.

Meahwhile- while they are cooking , get some chicken breast, or beef , or whatever meat or fish you like, cut it into small strips.
Put some oil in a saucepan, and heat it.
Add some minced garlic ( dried is ok too), and a small diced onion .
When the onion is translucent after about four minutes, add the chicken or meat pieces, and some chopped mushrooms, and carry on sauteeing them.
Cook for about four- five minutes, until. the meat is cooked through, it doesn’t take long, it is cooked when you can break through it with a spoon, and is not pink inside, – but white, like chicken!!
( Fish is the same).

Add a spash of soysauce to the chicken, and
add the noodles to the pan.
Stir through a little bit, and then serve on a plate.
Add chopped cilantro as a garnish.
